Mexican Yucatan Chicken Ingredients
- 700 grams of Chicken Thigh Fillets
- Salad
- 1/2 cup of Cabbage, shredded
- 1/4 cup of Carrot shredded
- 1 tablespoon of Cilantro, chopped
- Marinade
- 50 grams of Achiote Paste
- 1 Orange, juiced
- ½ teaspoon of Salt
- 1 clove of Garlic
- To Serve
- 10 Corn Tortillas
- Fresh Lime
How To Make Mexican Yucatan Chicken Pollo Pibil Tacos
- Slice the chicken thigh fillets into strips. Place in a non-reactive bowl.
- Place all the marinade ingredients into a blender and puree until smooth.
- Pour the marinade over the chicken and ensure all the chicken is well covered.
- Place the chicken in the fridge and allow it to marinate for at least 3 hours.
- Preheat the oven to 200C/390F. Prepare a cookie sheet by lining with parchment paper.
- Thread the chicken onto skewers and place onto the prepared tray.
- Bake for 20 minutes until cooked through.
- Combine salad ingredients while the chicken cooks.
- Serve the cooked chicken on a tortilla, with the salad and a squeeze of lime juice.
- Enjoy immediately.
